Day 76: Lemon Drop Cookies

There is something about a lemon cookie that makes me think of summer. Maybe it was eating them by the box full while at dance camp while I was in high school? Sweet and tangy, lemon cookies are always a favorite.

It has been a few weeks since I linked up with Deb at Focused on the Magic of Disney. This weeks theme, "C". In my world "C" stands for COOKIE!

While taking pictures of the Lemon Drop Cookies, Mickey made a special appearance.





This is a simple recipe, sure to please. I found it helpful to dip the cookies in lemon juice before covering with powdered sugar. Start with 1/2 tsp and add more as needed.


Lemon Drop Cookies




  • 1 cup of powdered sugar
  • 1/2 stick of butter
  • 1 egg
  • 2 tsp of lemon juice
  • 1 1/4 cup flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt (I use Kosher)
  • Zest of one lemon
  • 1/2 cup powdered sugar
  • Lemon zest
  • 1 tsp lemon juice (use more as needed)
    1. Cream butter and powdered sugar
    2. Add egg and lemon juice
    3. Slowly stir in flour, baking soda and salt
    4. Refrigerate for 30 minutes
    5. Preheat oven to 325 degrees
    6. Roll dough into a pall and place on the cookie sheet
    7. Bake for 10-12 minutes.
    8. Cool cookies on cookie sheet for 1 minute remove to cooling rack
    9. While cookies are still on the cookie sheet mix together powdered sugar and lemon zest.
    10. Before cookies are completely cooled cookie in lemon juice then cover in powdered sugar.




    Cool and enjoy!

    Wordless Wednesday- Hollywood Studios

    A busy week prevented me from participating in the Disney Wordless Wednesday Blog Hop hosted by Deb from Focused on The Magic of Disney last week. This week, I'm ready! And the theme, Hollywood Studios!

    Our visit to Disney's Hollywood Studios was extra special since it was Noah's 12th birthday. He wore that Birthday Button Proud, and LOVED all the extra attention.

    Noah's birthday present from us was a digital camera. A budding photographer, he captured the picture on the right of himself.

    One of the highlight of the day was seeing the stunt show Lights, Motor, Action!
    We were lucky enough to have a friend hook us up with not only VIP seating, but a backstage tour after the show! It was neat to see the behind the scene action between shows, learn about the cars and even better, the kids (and Papa) got to sit in the cars!!!

    Wordless Wednesday: The "A" Theme

    This week, Deb from Focus on the Magic of Disney provided us with an "A"theme. During our visit to Epcot there was one moment that was truly "A"-mazing. Epcot provided us with a chance to eat and drink around the world. We are huge sushi fans, so it was only fitting we have sushi while in Japan. Even though Noah doesn't look to thrilled in the first pic :).







    The boys were asking about the wasabi (you can see the lump of the wassabi in the picture above)served on the side of the sushi. Adam explained what it was, then proceeded to say "I will give the first one to try...." Before he could finish, Dane picked up the WHOLE SIDE of wasabi and popped it into his mouth!!

    What happened next was truly A-MAZING!!! Dane ate the whole clump of wasabi!!! Not without a little struggle as you will see below:

    GONE!!! He ate the whole thing and was all smiles after!!!

    We couldn't believe he actually ate wasabi! His only complaint was that we didn't video tape his feat. Dane thought the wasabi challenge would have made him a you tube sensation!

    Wordless Wednesday-Disney Castles

    Yeah, it's Wednesday! Today's theme from Deb at Focused on the Magic of Disney is: Disney Castles. Visiting Cinderella's Castle was at the top on the boy's to do list. Seeing the castle was like the pinch they needed to make them realize...we were in DISNEY WORLD!




    When we planned this trip to Disney World my husband and I were convinced we would be a "one and done" Disney family. What we didn't plan on was how much our family would LOVE this trip! One of the things that will definitely bring us back will be the opening of the new Fantasyland. To see Beast's Castle would be worth the trip!

    Wordless Wednesday: May Calendar

    I am currently making on online scrapbook of our trip to Disney. It is taking forever! We had so many great pictures, I think I will be working on it for quite a while.
     
    Until it's finished I'm glad I have Deb at Focused on The Magic of Disney that comes up with such wonderful weekly themes to post pictures to. This week, if I were to make a calendar this is the picture I would choose one of these shots for May. According to the boys, seeing the princesses was my early Mother's Day present.
     



     
     
    However, something tells me they didn't mind it too much!

    Wordless Wednesday: Adventure

    This week's Wordless Wednesday theme is Adventure! For my boys, the biggest adventure of our trip was participating in Jedi Training. To have a chance to have a lightsaber battle with Darth Vader was enough to put them over the moon.

    Thanks again to Deb at Focused on The Magic of Disney for coming up with such wonderful themes! Wednesday is quickly becoming my favorite day of the week, I look forward to seeing all the fantastic Disney pictures and meeting such nice people!!

    Wordless Wednesday

    A few weeks back we took the kids to Disney World. The excitement the boys showed before we left was nothing compared to their excitement while there. It was truly the best vacation EVER! I have secretly been dreaming of going back since the day we left. Unfortunately, going back to Disney World is not in our immediate future.
    However, through this wonderful new world of blogging, I found a fun way to relive the magic. I came across this blogger phenomena called Wordless Wednesday. Bloggers from all over post pictures relevant to a certain theme or topic. This Wordless Wednesday hook up is hosted by Deb Dis @Focused on the Magic and it is all about Disney!
    What a great way to share our Disney pictures (and give me a chance to dream a little dream once more).

    This weeks topic is Hats, Caps Bonnets and Bows.
    Some kids want Mickey ears when they visit Disney World, mine want soccer balls. This was taken at Epcot while shopping in England.


    ***As an added bonus, my friend sent me a picture of her son from their trip to Disney World. He is one of Dane's good friends, and has a smile that is absolutely contagious! Love having a BONUS Wordless Wednesday!
