Dane celebrated his birthday earlier this month and requested I make a "Cookie with layers of chocolate." He's 9. I think we may be watching too many food shows. Not many 9-year-olds would talk about the layering flavors of chocolate. Dark, Milk and Semi-Sweet all combine for a wonderfully moist and rich treat.

Triple Chocolate Chunk Cookies
1 stick of butter (softened)
1 cup brown sugar
1 egg
1 tsp burbon vanilla extract
1 cup flour
1/2 cup dark cocoa powder
1/2 tsp baking soda
1/4 tsp salt (I use Koser)
1 Hersey's Bar broke into pieces
1 cup semi sweet chocolate chips
Preheat the oven to 350 degrees.
Line a cookie sheet with parchment paper.
Sift together dry ingredients (flour, dark cocoa powder, baking soda and salt) set aside.
Cream butter and sugar.
Add egg and vanilla, mix well.
Slowly stir in dry ingredients.
Stir in Hershey's Bar pieces and chocolate chips.
Place teaspoon sized drops on a parchment lined cookie sheet.
Bake for 8-10 minutes.
Cool on the cookie sheet for 1 minute, move to rack to cool completely.

This sounds like my kinda cookie! I must admit my love of all things chocolate is rubbing off on my four boys who request chocolate cake for their birthdays almost every year!

Thanks :) when you baking everyday you end up with a lot of odds and ends. This was a great way to use up what I had in my baking drawer!
