Day 12: S'MORE Cookies

I wouldn't say that camping is one of my favorite things to do. The thought of sleeping on the hard ground in a tent and having everything I packed smell like campfire actually makes me want to avoid camping all together. However, there is one time a year when I am a willing and excited participant in this outdoor activity.

In about two weeks about 50 families from our kids schools will all be logging on to Michigan's DNR website to make reservations for our annual Crazy Camping trip. For this one weekend in August the kids get to ride around on their scooters, participate in activities like doughnut eating contests, watch out door movies (I never said we were roughing it) and spend days at the beach with their friends.

 In honor of Crazy Camping, I give you the S'more Cookie. I wanted to find a cookie that had a great graham cracker flavor. This one did not disappoint! I found this recipe by Maureen Worman on Allrecipe.com, delicious!

S'more Cookies



3/4 cup butter, softened
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 cup graham cracker crumbs
1/2 teaspoon salt
1/2 teaspoon baking soda
1 milk chocolate bar broke into pieces
1/2 cup of mini marshmallows


Preheat oven to 375 degrees
Mix the dry ingredients in a bowl and set aside.
Beat together butter and sugars until light and fluffy.
Blend in egg and vanilla, mix well.
Place teaspoon sized drops of dough on the cookie sheet.





Place in oven and bake for 8 minutes.
Remove from oven and place mini marshmallows and chocolate pieces on the cookie.
Return to the oven and bake for 3-4 more minutes






Cool on cookie sheet for 1 minute then transfer to a wire cooling rack.
