Day 11: Vernors Cookies

Happy 175th Birthday Michigan!! To celebrate Michigan's big day I decided to bake cookies using a Michigan original, Vernors.

For those non-michiganders out there, Vernors is our favorite ginger ale. Growing up in the mitten Vernors was a pantry staple. When we had a stomach ache my mom would give us warm Vernors. When our soccer team won the big game, it was off to the local ice cream stand for a Vernors float.

Making a Vernors Cookie was something I never thought I would attempt. I searched the web for recipes and found NOTHING! I changed my search to a soda cookie and found this one on Tasty Kitchen that I could work with.

Vernors Cookies
(adapted from Soda Cake Cookies recipe found on Tasty Kitchen)

1 box of white cake mix
1/4 cup (half of a stick) of butter
1/3 cup of Vernors
2 Eggs

Preheat oven to 375 degrees.

Partially melt butter (microwave for about 20 seconds)

Whisk together partially melted butter, eggs and Vernors

Add wet mixture to the cake mix

Mix together with a wooden spoon

Drop teaspoon size drops of dough on to the cookie sheet

Bake for 15 minutes. Remove from the oven and let the cookies cool on the cookie sheet for 5 minutes then transfer to wire rack to complete cooling.

Vernors Frosting

1/3 cup of confectioners sugar
1-2 tablespoons of Vernors

Add the Vernors to the confectioners sugar a little at a time until you have your desired consistency.
Drizzle over cookies.

Dane: "Awesome!"
Noah: "Epic."
Ian: "Fabulous!"
