The past two weeks brought me an unexpected hiatus from posting. This challenge is still going strong despite my lack of stories. I'm making cookies, taking pictures and writing everything down in my little blue cookie notebook.
We had a beautiful service for Grandpa, with full military honors. It was very moving and it was a nice way to honor such a wonderful man.
The day after the funeral, I went on a trip to Florida with some lovely ladies. This girl's week had been planned for a while. My "Seaside Girls"were so supportive. I returned from Seaside feeling rested (the first time in weeks) and ready to take on the next task, Ian's First Communion. Which is this Saturday!
I have been cleaning, shopping, and grating cheese for the past two days. Ian chose to have his favorite, lasagna, served at his party. Yep, lasagna for 100 people.
As I stated before, making the cookies is the easy part of this challenge. Now that the chaos has settled, it's time to get serious about posting :)
There is nothing like a good traditional cookie. Snickerdoodles are a simple and tasty treat that take little time to whip together. Simply impressive.

Snickerdoodles
1 cup sugar
1/2 cup brown sugar
1/2 cup of butter (softened)
1 teaspoon vanilla
2 eggs
2 3/4 cups all-purpose flour
1 teaspoon cream of tartar
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon of cinnamon
2 tablespoons of white sugar
1 tablespoon of cinnamon
Preheat over to 400 degrees.
Sift together flour, cream of tartar, baking soda, salt and cinnamon, set aside.
Cream together sugars and butter.
Add eggs and vanilla, mix well.
Slowly mix in dry ingredients.
In a small bowl add remaining sugar and cinnamon.
Form a ball from the dough and place in the cinnamon sugar mixture
Roll the dough in the mixture until completely covered
Place on cookie sheet and bake for 8-10 minutes.
Cool on cookie sheet for 1 minute then move to a cooling rack. Enjoy!
