Adam and I traveled to Boston this past August to celebrate our wedding anniversary. He travels to the Boston area for work once every few months, however this was my first time. Our plan was to stay in Boston for a few days then take the train into New York City. We were going to hit Manhattan, see a Broadway show and fly home from NYC. Then hurricane Irene hit. Mayor Bloomberg shut down Manhattan. Our train tickets were canceled so we were "stuck" in Boston.
There could be worse places to be stranded in. We decided to make the best of our situation (which wasn't hard!). We went on our own Hurricane Irene adventure, and discovered the Irish bars of Boston.
We traveled form pub to pub sampling beers, meeting new people, eating delicious calm chowda' and enjoying Irish music. It was a blast!!!
Fast forward to February. While we were in Disney World, we visited an authentic Irish pub, Raglan Road. During our 45 minute wait we were entertained by an Irish band AND Irish dancers. Then this happened (notice the cute kid in the middle).
1/2 Stick of Butter
Green Food Coloring
6 cups of Lucky Charm Cereal
Non stick spray
Foil or Parchment Paper
Melt Butter in a large sauce pan over medium heat
Add mini marshmallows
Remove from heat add Lucky Charms 2 cups at a time

With St. Patrick's Day this Saturday and our new love for all things Irish I came up with this simple fun cookie for the boys.
Lucky Leprechaun Cookie
1 Bag of Mini Marshmallows1/2 Stick of Butter
Green Food Coloring
6 cups of Lucky Charm Cereal
Non stick spray
Foil or Parchment Paper
Melt Butter in a large sauce pan over medium heat
Add mini marshmallows
Melt over low heat
Add a few drops of green food coloring and stir.
Remove from heat add Lucky Charms 2 cups at a time
Once all the cereal is mixed transfer to a greased piece of foil or parchment paper. Shape into a clover.
I had the boys each pull off a piece to eat.
Yummm!!
The clover I made wasn't too big so I had enough to make smaller cookies. For those I just dropped a little cereal mixture on a greased piece of foil. VERY EASY!!!
